Elliott started his footballing career at Arsenal in 1993, before being released two years later at 15 years-old. He was then picked up by Newcastle United in 1995. However, he failed to make an appearance for The Toon Army and endured numerous loan spells whilst contracted to Newcastle.
In 1997 he was loaned out to Hull City where he made three appearances, before joining Swindon Town and Gillingham in 1998. In 1999, he joined Wrexham on loan making a total of 10 appearances before joining Hartlepool United turning out another 5 times.
The new millennium saw Stuart go out on loan twice more to Bournemouth and Stockport, before his eventual release from Newcastle United at the end of the season.
During his time at Newcastle, Elliott was a regular with the side’s reserve team and eventually became captain, helping the side to win the Northumberland Senior Cup twice.
Following his release from St. James’ Park, he joined Darlington for a season, where he made a total of 33 appearances, scoring four times. Stuart picked up two red cards along the way as well. He finished the 2000/01 season with Plymouth Argyle after signing with them in March 2001.
In August 2001, he joined Carlisle United following a successful trial and signed on a short-term basis. He made just seven appearances for The Cumbrians before being released after he was not offered a new contract. Stuart subsequently signed with non-league outfit, Durham City in October 2001. However, just seven days later he joined Scarborough on a non-contract basis, where he spent two months making eight appearances scoring a single goal.
Elliott made a single appearance for Exeter City, coming off from the bench against Macclesfield Town in February 2002. Later that season he joined Southern Premier outfit Merthyr Tydfil on non-contract terms.
At the start of the 2002/03 season, Elliott joined Halifax Town in August, but was released in March 2003 after just 12 appearances in the Conference. He then joined Harrogate Town where he stayed for the rest of the season.
The utility player joined Ryman outfit Harrow Borough in August 2003, ready for the 2003/04 season after making 14 appearances in the Ryman League scoring a single goal. He was released in January 2004, and subsequently joined Waltham Forest until the end of the season. He then joined Gateshead towards the end of the season.
Newly relegated Northwich Victoria signed Elliott in June 2005. During that season he helped The Vics to a victory in an FA Cup tie over Woking, setting the club up with a lucrative tie against Sunderland. At the end of the 2005/06, Elliott finally completed a full season with a club, helping Northwich to gain promotion to the Conference.
Elliott was appointed Northwich Victoria’s captain for the 2006/07 season, where he made a total of 27 appearances scoring just once. He was released at the end of the season and joined York City in July 2007, alongside former Vics player Paul Brayson.
Despite being a regular at KitKat Crescent, he was released at the end of the season following a clear-out by York boss Colin Walker. Elliott joined Grays Ath on 7th May 2008, alongside winger Ish Welsh.
